What I’m Cooking…

I often use HelloFresh for my meal planning, and lately I’ve been choosing one vegetarian meal per week for us. I’ve also been avoiding actually making them. Last week, we had the Southwest Stuffed Poblanos though and it was wonderful. Very quick, and everyone loved it.

Still thinking about how I want to make these Apple Pie Cookies from Smitten Kitchen. Still intimidated.

What I’m Doing…

I joined the League of Women Voters in Wake County! I’ve only gone to the new member orientation meeting at this point, but I’m looking forward to finding a good committee fit for me and getting more involved in my city government.

Cleaning out Twitter. I deleted all of my tweets recently - they were not bringing me joy, and am starting anew with a focus on local government and politics, friends, and puppies.
